Spring Salad with Grapes and Pistachio


1/2 small shallot, very finely chopped
2 tablespoons red wine vinegar
1/4 cup extra-virgin olive oil
1 (5-ounce) package gourmet salad greens or spring lettuce mix
1 small kohlrabi (sliced)
1 cup seedless red grapes, halved
1/4 cup shelled dry-roasted pistachios, chopped
Salt and freshly ground pepper


In a large bowl, whisk the chopped shallot with the red wine vinegar and olive oil. Season with salt and pepper. Add the gourmet salad greens, kohlrabi, grapes, and toss. Sprinkle the pistachios and the AIR CHEESE to give it the extra crunch.
